Just the name "fried ravioli" can set a brain spinning.
Everyone has had ravioli, but fried?
For Jon Novell, owner and chef at Pastabilities, the dish was just one more unique item to add to the Italian menu of his Taylorsville restaurant.
"We came up with our own recipe," Novell said as he began letting the ravioli soak in boiling water to soften it. "We make alot of our own recipes. One thing is our pizza sauce. It doesn’t come out of a can. We make it here."
The ravioli, now softened up, is mixed with a few eggs before being dropped in a batter of spices.
"I make almost everything here." Novell said. "People come from all over to eat here."
Now covered in spices of his own mixture, the ravioli is dropped into a fryer for just more than three minutes.
Pastabilities might seem new to some people. Novell was the original owner of Double J's before he sold it in 2000. However, he could not stay away, and last year (2002) he bought it back, redecorated it and reopened it.
The menu is packed with Italian dishes, but with touches by Novell.
Even the pizza is upgraded here with a large expanded to 16 inches, two inches larger than some restaurants.
Along with pizza and fried ravioli, Pastabilities also offers cold and hot subs, along with a variety of pasta dishes, including veal parmigiana and chicken parmigiana.
The final step for the fried ravioli is a sprinkle of Parmesan cheese.
As good as the fried ravioli is, the highlight of any meal at Pastabilities are the fresh garlic rolls served with every meal.
"People love these rolls,"Novell said.
